Classic Alfredo Sauce

2 tablespoons butter
4 garlic cloves, minced
1 ½ cups heavy cream
3/4 cup shredded or grated Parmesan Cheese
Fresh parsley or basil, if desired.

  • Melt butter in sauce pan over low heat.
  • Add garlic. Slowly cook garlic until it releases a nice garlic fragrance.
  • Add cream. Turn up heat to medium high. Reduce cream to 3/4 cup.
  • Turn down heat. Stir in Parmesan cheese. Stir until melted.
  • Add parsley or basil. Toss with desired pasta of your choice.

Meatloaf

2 lb. ground beef
3/4 cup Bread crumbs
4 oz. milk
2 tablespoons ketchup
2 tablespoons BBQ sauce
2 tablespoons prepared mustard
2 tablespoons Worcestershire Sauce
2 eggs
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped bell pepper
2 tsp. salt
1 tsp. ground sage
1 tsp. thyme leaves
1 tsp. basil leaves
1 tsp. ground black pepper
1 tsp. garlic powder


  • Mix together all ingredients until just blended; do not over mix. Divide equally into equal amounts into 2 loaf pans. Bake at 325 degrees until internal temperature reaches 165. Let rest 10 minutes before cutting.Type your paragraph here.

Pasta Carbonara with Shrimp
 
1 lb. your favorite pasta
1/2 lb. bacon, diced
3 cloves garlic, minced
3 eggs, room temperature
1 cup heavy cream
1 1/2 cups grated parmesan cheese
1 pound Shrimp
Salt and Pepper to taste
 

  • Bring salted water to boil in large pot. Add pasta. Cook until desired doneness. Save some of the cooking water before draining. Reserve.


  • In saute pan, cook the bacon until just crisp. Drain off 1/2 of the fat. Add garlic Slowly cook garlic until soft. Add shrimp and cook briefly.


  • While pasta is cooking, in a bowl, mix together the eggs, cream and cheese until fairly smooth. Warm slightly. DO NOT COOK!


  • When pasta is done, remove it to a large bowl. While stirring the pasta, SLOWLY add the egg mixture. When egg mixture is added in, add about ½ - 1 cup of the reserved pasta cooking liquid, the bacon, garlic, and shrimp. Season to taste with salt and pepper.Type your paragraph here.
