Looking for catering for your small soiree'? Let me see if I can help. For catering, I normally stay away from large groups. So, if you have an in home dinner party, office hors d'oeuvres, or some other small event, I'd love to talk to you about it. I'm sorry I do not have "sample menus" or pre-set menus. I find out that most of the time they need to be modified or the client thinks that is all that can be offered. I like to sit down with each client and determine what they want and custom design their menu with them. This makes it easier to take into account dietary restrictions, costs, likes/dislikes, product availability, number of guests, and other factors. I then take a few days to cost out your menu and give you a final number: no service charges, taxes, fees, etc.  hidden in the fine print.

Need something tasty from the smoker? I can help you with that. Whether it is rack of ribs, a brisket, cold smoked salmon, chicken or even enough pulled pork to feed 100 people, my smokers are up to the task.


As with my catering above, I don't have a set price. Commodities change frequently. One week pork butts are $.99 a pound, the next week they are $1.79 a pound. When the 2020 pandemic hit, one couldn't find briskets under $6.00 a pound and now they are below $3.00 for the same thing.


So, this is how I price items. Market cost plus 20% plus $25 to fire up the smoker. The 20% is for seasonings and other associated costs like packaging. Thus, the more you purchase, the lower the cost per pound in the end.


And example would be: a 9 pound pork butt for pulled smoked pork  If the cost is $1.05 a pound, the market cost is $9.45. Plus 20% would bring it to $11.34. $11.34 + $25.00 = $30.87. A 9 pound bone-in pork butt has a yield of about 60% (approximately 5.5 pounds. Your cost per pound is now $5.61 per pound. Two pork butts brings that cost down to $4.35 per pound for approximately 11 pounds of finished product.


What can I smoke? Ribs, brisket, pork butts, whole or partial prime rib, whole or partial NY Strip loins, turkeys, chickens, pork loins, Canadian bacon, hams, cold or hot smoked salmon, some cheeses, bratwurst/sausages (which I can custom make for you), well, just about anything which will fit in the smoking chamber.
